Where can I see the XML document

Maybe I missed a critical peice of doucmentation somewhere but what is the structure of the XML document that these xslts are transforming? How would I know what paths to use when selecting thing?

I could just be bad at searching but I did not see any documentation regarding this, Is it possible to see my sites XML data somewhere?
