The University of the Sunshine Coast have a demo video of Workflow on their site.
Anyone got any idea of how I can get one just like it?

Yes, you can get one just like it.
You just have to go to back office and check User section.
In user section you can create user types like content writer,content approver.
Then you can create user and set its permission like content writer or approver.
Hope this will help to get an idea.
